Spinach Borek

Ingredients:

For the dough

300 g. (2 cups) all-purpose flour (sifted)

1 tbsp. yeast

 cup warm water

1 tsp. sugar

 tsp. Salt

1 tsp. turmeric powder 

 cup oil

For the filling

250 g. spinach (trimmed)

170 g. labneh or feta cheese

100 g. walnuts (diced)

1 onion (diced)

4 cloves garlic (grated)

 tsp. salt

 tsp. black pepper

Instructions:

  1. Dissolve sugar and yeast in warm water; set aside for 5 minutes until foamy.

  2. Combine flour, yeast mixture, turmeric, salt and oil in a large bowl. Knead by hand until smooth and satiny. Sprinkle oil in the bowl and Shape dough into a ball. Cover and let rest for 1 hour in a warm place until doubled.

  3. Meanwhile, Place the spinach in a pot and set on the stove top on medium heat. Cover the pot with lid. Let cook.

  4. Fry onions until golden. Add garlic and cooked spinach. Turn off the flame and add cheese, walnuts, salt and pepper. Mix them very well.

  5. Preheat oven on 180’C.

  6. Divide the dough into 2 pieces. Using a rolling pin, open the dough to a thickness of 2 mm. Cut it into 3 parts.
