Potato Salad

This classic potato salad is the best salad, a memory of food that none of us can or want to forget.

Ingredients:

1 chicken breast (chopped)

4 (about 600 g) boiled potatoes

2 boiled carrots (diced)

250 g. pickles (diced)

1 cup can of sweet peas

1 cup can of sweet corn

3 tbsp. dill (finely chopped)

2 tbsp. bloomed saffron

Salt and red pepper

Butter

Sauce:

2 tbsp. mayonnaise

1 tbsp. mustard

2 tbsp. yogurt

1 lemon juice

2 tbsp. olive oil

Salt, black pepper and thyme powder

Persian Salad

Serves    5 people

Prep time   30 m

Cook time   1.5 h

Instructions:

  • Marinate chicken in salt, pepper and saffron. Set aside for 30 minutes.

  • Sauté chicken with the butter in a pan. Cover and let cook.

  • Peel boiled potatoes and dice them into small cubes.

  • Mix all of ingredients.

Sauce:

  • Mix all of ingredients.

Mix sauce and salad together.
