Cracked Wheat Soup with Parsley

Soup is a primarily liquid food, generally served warm or hot (sometimes cool), that is made by combining ingredients of meat or vegetables with stock, milk, or water.

Ingredients:

250 g. cracked wheat

1 medium onion (grated)

2 medium carrots (diced small)

150 g. celery (chopped small)

60 g. parsley (finely chopped)

2 tsp. flour

Juice of a lemon

5 cups of water

Salt, black pepper and turmeric powder

Olive oil

Serves    5 people

Cook time   1.5 h

Instructions:

1)      Wash the cracked wheat in a large bowl and drain.

2)      Heat olive oil in a pot over medium heat; sauté onion until soft.

3)      Add flour, salt, pepper and turmeric.

4)      Add cracked wheat, celery, carrots and water. Cover and let cook.

5)      After 1 hour, add parsley and let cook for 30 minutes.

6)      Add lemon juice and serve the soup immediately.
